This is an easy party food that you can prepare ahead of time, and cook the day of. Lemongrass Beef Skewers 1140g beef chuck (2.5 lbs) 1 tsp salt 1 stick lemongrass 5 cloves garlic 2 tbsp oyster sauce 2 tbsp brown sugar 1 tbsp soy sauce Jeow Bong Mayo 1 tbsp Jeow Bong 1/2 cup Hellmann's Mayonnaise Sesame seeds for garnish Wash and peel the outer layer of the lemongrass stalk, finely slice it. Pound it with the garlic cloves and salt into a paste in a mortar and pestle. Slice the beef into long thin strips. In a mixing bowl, add the lemongrass-garlic-salt paste, oyster sauce, soy sauce brown sugar. Marinate in the fridge for at least 2 hours. Weave 2-3 strips onto the skewers, and spread along the skewer to flatten. Cook on medium-high for approximately 2 minutes on each side. The cooking time will depend on how thick you sliced your beef. Mix together the Jeow Bong and Mayo, and arrange the skewers on a platter. Garnish with sesame seeds, and micro greens. Serve with vegetable chips - instructions for that coming later this week. If you are having a party, you might also want to serve some crispy oven baked chicken wings. Enjoy!
